My mom was a single mom who worked full time and raised two kids. I’m sure after working a long day the last thing she wanted to do when she got home was make treats in the kitchen, but that’s what we did. It was kind of our thing. We were always making treats and goodies.
I’m sure my affinity for food is a direct result of those countless hours spent in the kitchen.
My mom had a talent for making holidays special for me and my brother. She passed away almost nine years ago and some of my fondest memories of her involve the two of us making goodies in that kitchen. One of our favorite halloween treats to make was puffed rice balls. Now, when I make them every year I do it, in part, as a nod to her and all that she taught me. Not just about delicious goodies in the kitchen, but about life.
So if you’re in need of a last minute halloween treat, this might be the one for you. It’s so quick and easy.
What you will need:
-about 15 cups of puffed rice (you can use popcorn instead if that’s more your taste)
-1 cup sugar
-3/4 cup light corn syrup
-2 Tbl butter
-1 Tbl vinegar
-pinch of salt
-1 tsp vanilla
Mix ingredients in medium pan and bring to a boil. Boil for one minute. Remove from heat and add vanilla. Pour over puffed rice (or popped corn) and stir until coated.
Have your wax paper ready. Put a large handful onto the wax paper then form into a ball.
And there you have it! A delicious treat all ready to share.
