Is there anything better than brunch? I think brunch translates into “lazy, relaxing morning with delicious food”
Well, we had such a morning on saturday and it was incredible. I really love to cook and bake. And I also love to try new recipes. The saturday brunch menu was poppy seed pancakes with either lemon custard sauce or sweet mango berry salsa. Wow, was it ever yummy!
Doesn’t this mango berry salsa look amazing?! Well it is!
It is so delicious on pancakes!
Sweet Mango Berry Salsa
2 mangos, diced
2 cups strawberries, diced
1 cups blueberries, diced
2 Tbl. mint leaves, finely chopped
1 Tbl. sugar
3 tsp. lemon juice
Mix mangos, strawberries & blueberries in bowl. Add finely chopped mint. Stir in sugar & lemon juice until well blended. Cover & refrigerate for at least an hour to allow flavors to mingle. Also delicious on ice cream.
And this lemon custard sauce is enough to make you melt off your chair. It would be yummy on whatever you put it on, but it does go very well with poppy seed pancakes.
Lemon Custard Sauce
3/4 cup sugar
3 tsp. cornstarch
1 small can evaporated milk
1/2 cup water
2 egg yolks, beaten
2 Tbl. fresh lemon juice
zest of 1 lemon
Combine sugar & cornstarch in small saucepan. Gradually stir in evaporated milk, water & egg yolks. Cook over med heat, stirring constantly, until mixture just comes to a boil & thickens. Remove from heat & cool slightly. Stir in lemon juice & zest.
Poppy seed Pancakes
2 cups flour
1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
3 Tb. sugar
Mix all dry ingredients together.
3 eggs, beaten
4 Tbl. butter, melted
2 cups buttermilk, room temperature (can substitute milk)
1 tsp. almond extract
3-5 Tbl. poppy seeds (however much you like)
Mix eggs, butter & buttermilk together then add to dry ingredient mixture & mix well. Add almond extract and poppy seeds. Enjoy.
So everyone plan a brunch for this weekend. You won’t regret it. Yard work can wait.
